½ cup pecans or walnuts, finely chopped
-
6 tablespoons unsalted butter, melted
-
2 tablespoons granulated sugar
For the Cream Cheese & White Chocolate Layer:
-
8 oz (1 block) full-fat cream cheese, softened at room temperature
-
¾ cup white chocolate chips (or finely chopped white baking chocolate), melted and cooled slightly
-
1 large egg, room temperature
-
⅓ cup granulated sugar
-
1 teaspoon vanilla extract
-
1 teaspoon orange zest (optional, adds citrus brightness)
For the Cranberry Swirl:
-
1 cup whole berry cranberry sauce (canned or homemade)
-
Alternatively, simmer 1 cup fresh/frozen cranberries with ¼ cup sugar and 2 tbsp water until thickened.
-
-
¼ cup white chocolate chips, for topping
-
¼ cup chopped pecans, for topping
Step-by-Step Instructions
1. Prepare the Pan & Crust
-
Preheat your oven to 350°F (175°C).
-
Line an 8×8-inch or 9×9-inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the bars out later.
-
In a bowl, mix the graham cracker crumbs, finely chopped pecans, sugar, and melted butter until the texture resembles wet sand.
-
Press the mixture firmly into the bottom of the prepared pan in an even layer. Bake for 8 to 10 minutes until set and fragrant, then set aside to cool slightly.
2. Make the Cream Cheese Layer
-
In a medium mixing bowl using a hand or stand mixer, beat the softened cream cheese and sugar together on medium speed until smooth and creamy.
-
Add the egg, vanilla extract, and orange zest (if using), mixing on low until just combined.
-
Slowly pour in the melted, cooled white chocolate, gently folding it into the cream cheese batter until fully incorporated.
-
Spread the cream cheese mixture evenly over the baked crust.
3. Add the Cranberry Swirl & Toppings
-
Spoon dollops of the cranberry sauce over the cream cheese layer.
-
Drag a butter knife or toothpick through the dollops to create a marbled swirl pattern across the top.
-
Sprinkle the top with the remaining ¼ cup chopped pecans and ¼ cup white chocolate chips.
4. Bake & Chill
-
Bake for 30 to 35 minutes, or until the edges are set and the center has a slight wobble.
-
Remove from the oven and let cool completely at room temperature.
-
Transfer to the refrigerator and chill for at least 3 to 4 hours (or overnight) to allow the cream cheese and white chocolate to firm up before slicing.
Chef’s Tips
-
Clean Slices: Wipe your knife with a warm, damp cloth between each cut to get neat, professional-looking squares.
-
Melting White Chocolate: White chocolate burns easily. Melt it in short 15-second microwave bursts, stirring thoroughly in between, and let it cool briefly so it doesn’t curdle the egg or cream cheese.
-
Nut Swaps: Pecans pair naturally with cranberries, but macadamia nuts or slivered almonds also taste fantastic in this crust.
