Italian Drunken Noodles

Italian Drunken Noodles are a delicious, rustic fusion comfort meal. While traditional Drunken Noodles (Pad Kee Mao) hail from Southeast Asia, this Italian-inspired twist swaps out the Asian-style soy and fish sauces for a rich, wine-kissed tomato sauce, Italian sausage, sweet bell peppers, and wide ribbons of pasta.

The name “drunken” comes from the generous splash of dry white or red wine used to deglaze the pan and build the deep, savory sauce.

Ingredients

The Pasta & Protein:

  • 8 to 12 oz wide ribbon pasta (such as pappardelle, tagliatelle, or wide egg noodles)
  • 1 lb Italian sausage (mild or spicy, casings removed)

The Aromatics & Veggies:

  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 2 to 3 bell peppers (red, yellow, or orange), cored and thinly sliced
  • 3 to 4 cloves garlic, minced
  • ½ tsp red pepper flakes (adjust for heat)
  • 1 tsp Italian seasoning (or a mix of dried oregano and basil)

The “Drunken” Sauce:

  • ½ cup dry white wine (like Pinot Grigio or Chardonnay) or a bold dry red wine
  • 1 can (28 oz) crushed or diced tomatoes (with their juices)
  • Salt and freshly cracked black pepper to taste
  • Fresh herbs (chopped flat-leaf parsley and fresh basil leaves)
  • Grated Parmesan cheese for serving

Instructions

1.Boil the Pasta:Cook wide noodles in salted boiling water until al dente, reserving 1 cup of pasta water before draining.

Bring a large pot of salted water to a boil. Add your pappardelle or wide egg noodles and cook until al dente. Drain, but make sure to save about 1 cup of the starchy pasta water to adjust your sauce later.
2.Brown the Sausage:Brown Italian sausage in a large skillet or Dutch oven, breaking it into bite-sized pieces, then set aside.

In a large, deep skillet or Dutch oven, heat the olive oil over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon as it cooks. Once fully browned and cooked through, remove the sausage with a slotted spoon and set it aside, leaving the savory drippings in the pan.
3.Sauté the Vegetables:Sauté sliced onions and bell peppers in the remaining oil until tender and slightly caramelized.

Add the sliced onions and bell peppers to the same skillet. Sauté for 5 to 7 minutes until the vegetables are softened and slightly caramelized. Stir in the minced garlic, Italian seasoning, and red pepper flakes, cooking for about 30–60 seconds until fragrant.
4.Deglaze with Wine:Pour in wine to deglaze the pan, scraping up browned bits, then simmer until reduced.

Pour in the dry wine. Use your spoon to scrape up all the delicious browned bits stuck to the bottom of the pan. Let the wine simmer for 2 to 3 minutes so the harsh alcohol cooks off and the flavor concentrates.
5.Build the Sauce:Stir in crushed tomatoes and simmer for 10 minutes, then return the cooked sausage to the pan.

Pour in the crushed tomatoes (with juices) and season with salt and pepper. Let the sauce simmer gently over medium-low heat for 10 minutes so the flavors meld. Return the cooked sausage and any accumulated juices back into the skillet, along with fresh chopped parsley.
6.Combine and Serve:Toss the cooked pasta directly into the wine-kissed tomato sauce until fully coated.

Add your cooked pasta directly into the skillet. Toss everything vigorously for a minute or two, adding a splash of reserved pasta water if the sauce needs loosening. Serve hot garnished with fresh basil leaves and a generous dusting of grated Parmesan cheese.
