Chia Seed Pudding

Chia Seed Pudding is the ultimate make-ahead, nutrient-dense breakfast or healthy dessert. Despite their tiny size, chia seeds are a nutritional powerhouse packed with soluble fiber, plant-based omega-3 fatty acids, magnesium, and complete protein.

When combined with liquid, chia seeds absorb up to 10 times their weight, forming a rich, tapioca-like gel that requires zero cooking and can be customized with endless flavors.

Ingredients

The Base:

  • ¼ cup chia seeds
  • 1 cup milk of choice (whole milk, almond milk, coconut milk, or oat milk all work wonderfully)
  • 1 to 2 tbsp sweetener of choice (maple syrup, honey, or agave nectar)
  • ½ tsp pure vanilla extract
  • A tiny pinch of salt (to enhance the overall flavor)

Optional Toppings & Variations:

  • Fresh berries, sliced bananas, or mango chunks
  • Toasted nuts, coconut flakes, or a sprinkle of cinnamon
  • A dollop of Greek yogurt or a drizzle of nut butter

Instructions

1.Combine the Ingredients:Whisk chia seeds, milk, sweetener, vanilla extract, and salt together in a bowl or mason jar.

In a medium mixing bowl or a mason jar, combine the chia seeds, your milk of choice, sweetener, vanilla extract, and a pinch of salt. Whisk or stir vigorously with a fork or whisk to ensure no clumps form.
2.First Rest and Stir:Let the mixture sit for 5 minutes, then stir or shake again to prevent the seeds from clumping at the bottom.

Let the mixture sit at room temperature for 5 minutes. The chia seeds will quickly begin to absorb the liquid. Give the mixture another thorough stir or shake to break up any clumps and distribute the settling seeds evenly.
3.Chill and Set:Cover and refrigerate for at least 4 hours, or preferably overnight, until thick and pudding-like.

Cover the container tightly with a lid or plastic wrap and place it in the refrigerator for at least 4 hours, or preferably overnight. During this time, the seeds will fully expand and create a thick, creamy pudding consistency.
4.Fluff and Serve:Give it a final stir, layer with your favorite fresh fruit or toppings, and serve chilled.

Give the chilled pudding a quick stir (add a splash of milk if it’s too thick). Spoon it into bowls or jars, layer with your favorite fresh fruits, nuts, or a drizzle of honey, and enjoy!
