Cheddar Bay-style drop biscuits

These Cheddar Bay-style drop biscuits are buttery, cheesy, loaded with garlic, and require zero rolling or cutting. Because they are drop biscuits, they come together in under 20 minutes.

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour (240g)
  • 1 tablespoon baking powder
  • 1 teaspoon sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon Old Bay seasoning (the secret touch for that authentic restaurant flavor)
  • ½ cup unsalted butter, cold and cubed (or grated)
  • 1 cup sharp cheddar cheese, freshly shredded (avoid pre-shredded bags so they melt better)
  • 1 cup cold buttermilk (or milk mixed with 1 tablespoon of lemon juice/vinegar, left to sit for 5 minutes)

For the Garlic-Butter Topping (Brush-on):

  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon garlic powder
  • 1 teaspoon dried parsley (or chopped fresh parsley)
  • Optional: A tiny pinch of salt or extra Old Bay

Instructions

1.Prep and Preheat:Get your oven blazing hot for a crisp exterior.

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
2.Mix the Dry Ingredients:Whisk the flour base.

In a large mixing bowl, whisk together the flour, baking powder, sugar, garlic powder, salt, and Old Bay seasoning until well combined.
3.Cut in the Butter:Create the flaky texture.

Add your cold, cubed butter into the flour. Using a pastry cutter, a fork, or your clean fingers, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter left over.
4.Add Cheese and Buttermilk:Do not overmix.

Stir in the shredded cheddar cheese. Pour in the cold buttermilk and gently fold using a spatula just until the flour is moistened. Do not overmix, or the biscuits will become tough. The dough will be thick and sticky.
5.Drop and Bake:12 to 14 minutes in the oven.

Scoop roughly 1/4-cup portions of dough and drop them onto the prepared baking sheet about 2 inches apart. Bake for 12 to 14 minutes, or until the tops are golden brown and cooked through.
6.Brush with Garlic Butter:The signature finish.

While the biscuits are baking, whisk together the melted butter, garlic powder, and parsley. As soon as the hot biscuits pull out of the oven, generously brush the garlic-butter mixture all over the tops. Serve warm!
