Achieving fall-off-the-bone, tender slow-cooked ribs doesn’t require an outdoor smoker. Using a slow cooker (or low-temperature oven) traps moisture, breaking down tough collagen over several hours into succulent gelatin. Finishing them under a hot broiler caramelizes the barbecue sauce into a sticky, smoky crust.
Prep & Cook Time
-
Prep time: 15 minutes
-
Cook time: 7 to 8 hours on LOW (or 3.5 to 4 hours on HIGH) + 5 minutes broiling
-
Yield: 4 servings
Ingredients
-
1 rack (3 to 4 lbs) baby back ribs or St. Louis-style pork ribs
-
2 tablespoons yellow mustard (acts as a binder for the rub)
-
3 tablespoons seasoned barbecue dry rub (brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper)
-
1 cup your favorite barbecue sauce
-
¼ cup apple cider vinegar or apple juice (for the slow cooker base)
-
½ teaspoon liquid smoke (optional, for that authentic outdoor flavor)
Step-by-Step Instructions
1. Remove the Membrane (The Silver Skin)
Flip the rack of ribs bone-side up. Slide a butter knife under the thin white membrane (silver skin) covering the bones. Grasp it with a paper towel for a firm grip and peel it off completely. Removing this ensures the dry rub penetrates the meat and keeps the ribs tender rather than chewy.
2. Season the Ribs
Pat the ribs dry with paper towels. Rub a thin layer of yellow mustard all over both sides of the rack. Generously coat the entire rack with your dry rub, massaging the spices into the meat.
3. Load the Slow Cooker
Pour the apple cider vinegar (and liquid smoke, if using) into the bottom of the slow cooker insert. Cut the rack of ribs into 3 or 4 smaller sections so they fit easily. Stand the rib sections upright against the inside wall of the slow cooker, meat-side facing outward.
4. Slow Cook Until Tender
Cover with the lid and cook on LOW for 7 to 8 hours (or HIGH for 3.5 to 4 hours). The ribs are ready when the meat has pulled back from the bone tips and is tender enough to pierce easily with a fork.
5. Sauce and Broil for a Sticky Crust
Preheat your oven’s broiler to HIGH and line a large baking sheet with foil. Carefully transfer the tender rib sections to the baking sheet using tongs. Generously brush the top and sides with barbecue sauce.
Broil 10 to 12 inches away from the heat element for 3 to 5 minutes, watching closely until the sauce bubbles, darkens, and caramelizes.
6. Rest and Serve
Let the ribs rest for 5 minutes so the juices settle. Slice between the bones and serve hot with extra barbecue sauce on the side!
