Teriyaki chicken and pineapple foil packets are an incredible dinner option—sweet, savory, tender, and virtually mess-free because everything bakes or grills right inside aluminum foil pouches.
Ingredients (Makes 4 Foil Packets)
For the Packets:
-
1.5 lbs chicken breast or thighs, cut into bite-sized 1-inch cubes
-
2 cups fresh or canned pineapple chunks (if using canned, drain well and reserve 2 tbsp juice)
-
1 large red bell pepper, diced into 1-inch pieces
-
1 small red onion, diced into 1-inch pieces
-
1 cup broccoli florets (optional, chopped small)
-
1 tbsp olive oil or sesame oil
For the Teriyaki Glaze:
-
½ cup teriyaki sauce (store-bought or homemade)
-
2 tbsp pineapple juice (reserved from can or fresh)
-
1 tbsp honey or brown sugar
-
2 cloves garlic, minced
-
1 tsp fresh ginger, grated
-
Garnish: Sesame seeds and sliced green onions
Step-by-Step Instructions
1. Prep the Teriyaki Sauce & Ingredients
-
In a small bowl, whisk together the teriyaki sauce, pineapple juice, honey, minced garlic, and grated ginger.
-
In a large mixing bowl, toss the cubed chicken, pineapple chunks, red bell pepper, red onion, and broccoli with 1 tablespoon of oil.
-
Pour half of the teriyaki sauce mixture over the chicken and vegetables; toss until evenly coated. Reserve the remaining sauce for brushing after cooking.
2. Assemble the Foil Packets
-
Cut four 12×18-inch sheets of heavy-duty aluminum foil.
-
Divide the chicken, pineapple, and vegetable mixture evenly among the center of each foil sheet.
-
Bring the long sides of the foil together over the top and fold them down tightly to seal. Fold and crimp the open ends to create fully sealed packets with room inside for steam to circulate.
3. Cook (Oven or Grill)
-
Oven Method: Preheat your oven to 400°F (200°C). Place the foil packets on a large baking sheet and bake for 20 to 25 minutes, until the chicken reaches an internal temperature of 165°F.
-
Grill Method: Preheat an outdoor grill to medium-high heat (375°F–400°F). Place the packets directly on the grates and grill for 15 to 20 minutes, turning once halfway through.
4. Garnish & Serve
Carefully open the packets (watch out for hot steam!). Brush the cooked chicken and veggies with the remaining reserved teriyaki glaze, then garnish with toasted sesame seeds and chopped green onions.
