Old-Fashioned Ham & Bean Soup is the ultimate comfort-food classic. Thick, hearty, and deeply savory, it turns humble ingredients—like leftover ham, dried navy or Great Northern beans, and aromatic vegetables—into a slow-simmered meal that warms you from the inside out.
The secret to restaurant-quality bean soup at home lies in building layers of flavor: starting with a ham bone or smoked ham hock to infuse the broth, sautéing a classic mirepoix, and letting the beans simmer until they break down slightly, creating a rich, velvety broth without needing heavy cream.
Ingredients
The Beans & Broth:
-
1 lb dried Great Northern or navy beans (rinsed and picked over)
-
6 to 8 cups low-sodium chicken broth (or water)
-
1 large smoked ham hock, meaty ham bone, or 2 cups of thick-cut cooked ham cubed
The Aromatics & Vegetables:
-
2 tbsp olive oil or unsalted butter
-
1 medium yellow onion, finely diced
-
3 stalks celery, sliced
-
3 medium carrots, sliced into rounds
-
4 cloves garlic, minced
-
2 bay leaves
-
1 tsp dried thyme (or 3 sprigs of fresh thyme)
-
Salt and freshly cracked black pepper to taste
The Finishing Touches:
-
1 tbsp fresh lemon juice or a splash of apple cider vinegar (to brighten the rich broth)
-
¼ cup fresh flat-leaf parsley, chopped
Instructions
1.Prep the Beans:Sort and rinse beans, then soak overnight (or use a quick-soak method by boiling for 2 minutes and resting for 1 hour).
Place the dried beans in a large bowl, cover with plenty of cold water, and let them soak overnight (at least 8 hours). Drain and rinse before cooking. (If pressed for time, use the quick-soak method: cover beans with water in a pot, bring to a boil for 2 minutes, remove from heat, cover, and let sit for 1 hour before draining).
2.Sauté the Aromatics:Sauté diced onion, carrots, and celery in a large Dutch oven until softened, then add garlic and herbs.
In a large, heavy-bottomed Dutch oven or soup pot, heat the olive oil or butter over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, for 6 to 8 minutes until the vegetables begin to soften. Stir in the minced garlic, thyme, and a pinch of black pepper, cooking for 1 minute until fragrant.
3.Combine Base Ingredients:Add soaked beans, chicken broth, and smoked ham hock or ham bone to the pot.
Add the drained beans, chicken stock, and your smoked ham hock or ham bone into the pot with the vegetables. Drop in the bay leaves. Ensure the liquid covers everything by an inch or two (add an extra cup of water or broth if needed).
4.Simmer Low and Slow:Bring soup to a boil, then reduce heat, cover, and simmer gently for 1.5 to 2 hours until beans are tender.
Bring the soup to a rolling boil over high heat, then immediately reduce the heat to low. Cover the pot and let it simmer gently for 1.5 to 2 hours, stirring occasionally. Cook until the beans are completely tender and creamy, and the meat is falling off the ham bone.
5.Shred and Return the Ham:Remove ham bone, shred meat and return it to the pot, discarding bones and bay leaves.
Carefully remove the ham hock or bone from the pot. Once cool enough to handle, pull any tender meat off the bone, chop or shred it, and return the meat to the soup. Discard the remaining bone and bay leaves.
6.Finish and Serve:Stir in fresh lemon juice and parsley, season with salt and pepper to taste, and serve hot.
Stir in the fresh lemon juice or apple cider vinegar to brighten the rich broth. Taste the soup and season with salt and freshly cracked black pepper as needed (remember, ham adds salt, so season at the very end). Stir in fresh chopped parsley and serve hot with crusty bread!
